ROASTED RED PEPPER COULIS

Makes 1 cup
2 well-drained Luna Rossa® Premium Roasted Sweet Red Peppers® when puréed, should equal approximately 1 cup)
2 tablespoons chicken, clam, or vegetable broth
1 tablespoon olive oil
1/2 teaspoon hot pepper sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
In food processor or blender, purée peppers until almost smooth. Add remaining ingredients; process coulis until smooth, scraping down sides of bowl occasionally.
Pour approximately 1/4 cup into center of each dinner plate. Top with grilled chicken or fish.
