A nice Chianti would be the perfect accompaniment to the robust flavors of this delicious appetizer.

ARTICHOKES, ROASTED PEPPERS AND PROSCIUTTO

Makes 24 appetizers

1 (26-ounce) jar Luna Rossa® Premium Roasted Sweet Yellow and Red Peppers, well- drained
24 Luna Rossa® Whole Artichoke Hearts, well-drained
6 ounces (24 slices) very thinly sliced prosciutto

Carefully slice the peppers lengthwise into approximately 1-inch wide strips. You should have 24 strips.

Wrap 1 pepper strip around 1 whole artichoke. Then wrap 1 slice of prosciutto around the pepper. Cover and refrigerate.

These can be served as a delicious first course or alternate yellow and red peppers on a serving tray for a colorful Spanish tapas or Greek meze presentation.
